The Anaheim pepper, also called the California green, or chilie verde when green, or the California red chilie when red. These peppers are mildly hot, ½ inch to two inches wide and six to eight inches long. They have a crinkly skin and are light green, ripening to red.

They are a great tasting pepper that can be used in all sorts of recipes. Their skin is some what tough so they are often roasted and peeled before being used.

The Anaheim pepper can be found in almost any grocery store, so they can be used year round.They are closely related to the New Mexico chili which looks the same but is much hotter.
